Puran Poli is a sweet flatbread and is popularly enjoyed during Ganesh Chaturthi and Diwali in Maharashtra. This bread is made by filling a lentil mixture, which is prepared using roasted chana dal and jaggery.
Puran Poli is the Marathi name of the dish where ‘Puran’ is the sweet lentil mixture and the bread is called ‘Poli’. During the Ganesh Chaturthi festival, Modak, Puran Poli, and Nariyal ladoo are usually prepared in Maharashtra.

Ingredients (Serving 4)
For making fillings
1 cup gram dal (chana dal)
1 cup jaggery (you can use sugar also)
A few strands saffron
1/2 cardamom powder
1/4 teaspoon nutmeg powder
Pinch of mace powder
2 tablespoon ghee
Salt as required
For making dough
1/2 teaspoon refined oil
1/4 teaspoon turmeric
2 cups all-purpose flour (you can use whole wheat flour also)
Salt for taste
2 tablespoon ghee (for serving)
How to make Puran Poli
Step 1: Prepare the filling for Puran Poli
1. For preparing this easy, sweet Maharashtrian recipe, wash and soak the gram dal in 1 and 1/2 cup of water for 30 minutes and drain excess water. In a pressure cooker, cook the gram dal for 4-5 whistles.
2. The dal did not need to be cooked completely. 85%-90% cooked dal is fine. Once the pressure settles on its own, strained the cooked dal.
3. Then put the saucepan over medium flame and add ghee to it. Once the ghee is melted, add gram dal in it. Roast for 3-4 minutes and then add jaggery, cardamom and nutmeg powder, mace powder, and salt as required in it. Dissolve the saffron in a little amount of water and add it to the mixture.
4. Mix all the ingredients and cook the dal for another 2-3 minutes. Once done, turn off the flame and mash that dal using a potato masher. You can also use a strainer to mash the mixture.
5. Divide the mixture into 12 equal portions and keep aside.
Step 2: Knead the dough
1. In a dough kneading plate, add all-purpose flour, turmeric, salt for taste, refined oil. Rub well and add water as required and knead well to make a stiff dough.
2. The dough should be smooth and soft.
3. Cover and divide the dough into 12 equal portions and keep aside.
Step 3: Make Puran Polis
1. Take one part and press it a little to make space in the center. Once done, place a portion of the mixture in the center of the rolled dough.
2. Join all the edges in the center and pinch them. Close and shape them like a ball. Sprinkle some flour and roll the dough with a rolling pin and make a roti.
Step 4: Cook the Puran Polis
1. Put a tawa or griddle on a medium flame, spread some ghee, and place roti in it. Cook the roti from both sides.
2. Apply ghee on the Puran Poli when the golden brown spots appear. This will give a crispy texture.
3. If everything is done properly then Puran Poli will puff out.
Serve hot Puran Poli with tea/coffee or yogurt/milk.
